The Benefits of Clayfields Honey

Choosing raw, unfiltered honey is not just a choice for the palate, but for well-being.

Natural Enzymes: Our cold-extraction process preserves the live enzymes that aid digestion and health.

High in Antioxidants: Raw honey is rich in phenolic compounds that help protect the body against cellular damage.

Local Pollen: Consuming honey containing local pollens is often sought after by those looking to support their body’s natural resilience to seasonal allergens.

Antibacterial Properties: Naturally occurring hydrogen peroxide and low moisture levels make raw honey a powerful natural antimicrobial.

When you open a jar of Clayfields, you are experiencing honey in its most honest and luxurious form, exactly as nature intended.

Raw, Unfiltered, and Seasonal

To bring you honey as it exists in the hive, we follow a strict minimal-intervention process:

Raw & Unheated: We never heat-treat or pasteurize our honey. This ensures that the delicate enzymes, antioxidants, and natural aromas remain intact.

Unfiltered: We use a simple gravity-straining method to remove large wax particles while keeping the nutritious bee pollen within the honey.

Unique & Seasonal: Because our bees forage on whatever is currently in bloom, no two harvests are ever the same. Each jar of Clayfields honey is a unique "snapshot" of a specific time and place in the Hunter Valley, offering a flavor profile that can never be replicated.

Our Philosophy

Bees First

At Clayfields, we believe that exceptional honey is a gift, not a commodity. Our primary responsibility is the health and happiness of our bees. Their welfare is paramount, and every decision we make—from hive placement to harvest—is guided by a commitment to ethical beekeeping and environmental stewardship.

Ethical Welfare & Stewardship

We do not view our bees as a resource to be exploited, but as vital partners in our local ecosystem. We ensure our hives are placed in pristine environments where the bees have access to a diverse range of native flora. By maintaining smaller apiaries and monitoring hive health with rigorous, frequent checks, we ensure our colonies remain strong, vibrant, and stress-free.

The Art of Hand Harvesting

Unlike mass-produced honey that relies on industrial machinery, Clayfields honey is harvested by hand in small batches. This "slow honey" approach allows us to inspect every frame and ensure we only take the surplus, leaving plenty of honey for the bees to thrive through the seasons. This labor-intensive process preserves the integrity of the hive and the quality of the harvest.
